Matzah
MATZAH
4 cups flour (can be half white and half whole wheat)
1.5 cups water (white grape juice is good)
2 T oil (makes it softer, more like a tortilla. No oil you’ll have a cracker)
1 t salt (optional)
Preheat oven as hot as it will go. 500 is good.
Combine ingredents and knead for 10 minutes.
Divide in half, then each half into 4 pieces.
Roll out as thin as possible into ovals.
Pierce with fork several times.
Place on baking stone (or baking sheet with parcment paper)
Bake until slightly browned, turn and brown other side.
Cool on rack.
FOR PASSOVER the dough must be in the oven within 18 minutes from the time you add the water..so reduce kneading time or half the recipe.
