Jalapeno Soufflé

Jalapeno Soufflé

18-24 fresh jalapeno peppers. Cut in half, corded and seeded
2 eggs
2 Tbsp flour
1 lb jack cheese sliced
1 lb chedder chees sliced
1 can evaporated milk
1 large bottle green chili salsa
Spray rectangle or square casserole dish with oil.

Lay layer of peppers in bottom, place layer of jack cheese on the peppers.
Lay layer of peppers, then layer of cheddar cheese.

Repeat until all the peppers are used.

In a large mixing bowl beat with electric mixer the eggs, milk and flour. Beat well.
Pour over peppers and cheese and bake 40 minutes at 375.
Remove from oven and add 1 more layer of cheese and
 pour the green chili sauce over the cheese.

Bake 20-25 minutes more- until cheese is melted.

( If you leave the cords and a few seeds it will be much hotter )
